Lemon Coconut Cake with Lemon Curd Filling

i have been extremely busy and overwhelmed lately that i really had to time to be here in my favourite spot and enjoy posting and sharing my ideas with you but hopefully it will be getting better soon and i will be here more often.
well since its summer and nothing is more refreshing in summer as a glass of lemonade or maybe a slice of my favourite lemon cake  :), I will share with you my all time favourite lemon cake recipe .
This cake reminds me of my childhood and the breath taking smell of the cakes that my mom used to bake for us in the summer afternoons. If your a fan of the fresh taste of lemon you must try this recipe.

Cake Layers :

Ingeriedents:
2 Lemon cake mix
1 instant Jell-O lemon mix
3 large eggs
1 1/3 cup water
1/3 cup fresh lemon juice
1/2 cup olive oil
1 tablespoon grated lemon peel
1 teaspoon lemon extract
1 cup shredded coconut
Cream cheese frosting (optional)
butter & flour for the pan (9-inch) cake pans
Instruction:
1.  Preheat oven to 350-degrees ,  Butter and flour 3 (9-inch) cake pans.
2.  In large bowl combine 1 1/2 cake mix and the jello mix; stir together with a whisk.
3.  Add eggs, water, lemon juice and oil.  Stir but please do not over mix.
4. Add the lemon zest and lemon extract to the cake mix along mix it gently until well blended.
5.  Distribute the mix in the 3 cake pans. Bake cakes for 28 to 30 minutes.
6. Let it cool for 10 minutes.  Flip pans over to remove cakes, and let cakes completely cool o until ready to frost.

Lemon Curd Filling

Ingeriedents:
1  double broiler
3 eggs
3/4 cup sugar
1/3 cup fresh lemon juice
1 tablespoon lemon zest
6 tablespoons cold butter
Instruction:
1.  Fill bottom of double boiler pan with 3-inches water and bing to boil.
2.  In top pot of double broiler combine the eggs, sugar, lemon juice and lemon zest. stir mixture over the boiling water with a whisk , continue for 8 to 10 minutes until it thickens. Remove from heat and stir in the butter a few tablespoons at a time, stirring until melted.
3.  Spread the cream cheese frosting between layers then spread some lemon curd on the top of the cream cheese then sprinkle some coconut , coat the cake with the rest of the lemon curd.
4.  Pat 1 cup coconut around sides of cake and decorate with lemon slices ( optional).
